    说“馕”


     
      饭后读《舌尖上的中国》,看周作人、梁实秋、汪曾祺、丰子恺等人从豆汁说到干丝再到饺子到烤羊肉,便又唇齿生津起来。 说来我虽谈不上走南闯北,中国版图近一半的地方还是到过的,各地风味小吃也尝了不少。 但要真说起对于我最熟悉亲切却较少被人提及的食品,就要属新疆的馕了。
     
      馕是新疆维吾尔族的传统食品,来自波斯,古称“胡饼”。馕的品种繁多,细细追究起来大小滋味又各有不同。 就我所见,最常见的馕圆形九寸大小,色泽金黄,其上常有及其细碎的芝麻和洋葱,贴于一米多深的土制馕坑壁上烤制而成,初出坑时香软又有嚼头,且保存时间很长,适合出外长途跋涉时携带充饥。 我父母在测绘部门工作,那些出野外任务的测绘队员出行,馕就是必备的干粮。
     
      曾经看过一个笑话,说马可波罗来中国,在西域吃到馕,赞美不已;到中原吃了饺子,也爱其美味。 等回到意大利想如法炮制,结果搞不定饺子怎么包,只好把陷料摊在馕上,于是就成了批萨饼的前身。 虽然非考证而玩笑,但也说明了馕悠久的历史和让人难忘的美味。
     
      事易时移,馕也在与时俱进。 乌鲁木齐的阿不都拉馕早就注册了商标。这几年一道“馕焖(包)肉”的新菜也风靡新疆甚至全国,的确,羊肉汁水的鲜美配上馕的独特口感,这道菜能吃出浓浓的西部风情。
     
      其实,我突然想到写这篇小文,就是因为馕是伴着我长大的食品。在新疆,不光维吾尔族,馕是各个民族都广泛接受的主食。 我在新疆完整生活了十八年,也吃了十八年的馕。 现在回想起来,小时候,酷暑中午,父母偶尔懒得开火做饭,我和妹妹一人抱着半个西瓜,就着馕吃西瓜,那是何等的自在野趣。或者冬夜下雪,在飘飞的雪花中守在红亮亮的馕坑前,闻着诱人的香味等着新馕出坑,又是何等温暖的等待。
     
      说起来,我离开新疆这几年,总有人初见时因为我身材纤弱又轻声细语,往往把我误当作江南人氏。其实,不光一方水土养一方人,饮食起居民风民俗,都对一个人的成长有着潜移默化的影响。 馕这个东西,光说读音,就有塞外野韵,自然不是在小桥流水中所孕育承传。至于味道,也是西域特有的,来自大地和火焰的热烈,麦面和阳光的清香。 所以,吃馕长大的我,自然也有新疆人彪悍粗放的一面。
